Ingredients

- 1 onion
- 3 cloves garlic
- Meat of your choice (beef, lamb, or chicken)
- Salt, to taste
- Your preferred spices
- 2 carrots
- 2 potatoes
- 1 zucchini
- ¼ cabbage
- 2 tomatoes
- Water or broth to cover ingredients
Instructions
- Chop the onion and garlic. In a large pot, cook the onion until soft. Add the garlic and cook for another minute.
- Add the meat, salt, and spices. Let it cook for a few minutes to release flavor.
- Chop all vegetables and add them to the pot. Pour in enough water or broth to cover everything.
- Bring to a boil, then reduce heat and simmer until the meat and vegetables are soft.
- Remove the meat and blend the vegetables and liquid until smooth.
- Cut the meat into small pieces and return it to the soup. Simmer for a few more minutes and serve hot.
Why I make this Soup
My kids don’t like eating vegetables when they can see them, so this soup helps me make sure they still get the nutrition they need. I also blend a small portion of meat for my younger child, who doesn’t like eating meat, so they still get the nutrients without fuss.
